Ok. We're carnivores here, but not everyone is. It has to be tough designing and making a vegetarian Thanksgiving. So here's the place to share your ideas on the meatless Thanksgiving

I'm not a veggie, but I sympathize with 'em, and I've altered my diet to reduce cruelty (a small but, I hope, effective way to influence the industry).

Nobody's asking you to go veggie, so keep your stupid comments to yourself--or at least post 'em somewhere where they're warranted!

BTW, 10 years ago in SF I had a veggie GF; we got a tofu turkey loaf from an upscale veggie place and it was good. Of course, good company makes the food good!

My mother and sister are vegetarian. It means I make dressing with a rich mushroom or vegetable broth instead of chicken, but honestly, there are so many side dishes that people need to have on the table for it to feel like Thanksgiving to them, not having meat with the meal is really pretty minor.

Mashed potatoes, roasted sweet potatoes w/chili powder, dressing, green beans w/almonds, Grandma's squash casserole, at least one variety of cranberry sauce--followed by apple crisp and/or poundcake and/or dark chocolate truffles and a cup of coffee or tea.

Sheesh--if you aren't sated by then, there's no hope for you!

Recipes people! My son has decided to be a vegetarian and we are trying to be supportive. My culture, American Midwesterner, doesn't have a strong vegetarian tradition so I need hints for making vegatarian cuisine a part of the holiday (and daily) table.

So give with the roasted sweet potato with chili powder! Sounds excellent!

Chili-Roasted Sweet Potatoes
(from the "Fresh Every Day" cookbook by Sara Foster)

*2 lbs. sweet potatoes (3-4 med), peeled, halved lengthwise, and cut into 3" wedges
*1/4 c. olive oil
*Juice of 2 limes
*1/2 tsp. sea salt, or to taste
*1/2 tsp. freshly ground black pepper, or to taste
*2 tsp. chili powder
*2 tbl. chopped fresh flat-leaf parsley

Preheat the oven to 400˚F.

Place sweet potatoes on a baking sheet w/sides and toss with olive oil, lemon jice, salt, and pepper.

Spread them in a single layer and roast for 20-25 minutes until the potatoes are soft and golden brown. Stir potatoes about halfway through cooking time so they brown easily.

When the potatoes are almost done, remove from oven and sprinkle with chili powder and parsley. Toss to coat.

Return to the oven for the final 5-10 minutes of cooking. Serve warm or at room temperature.

This recipe says it serves 4; it serves more at my house, especially if there are several other things on the menu.


(As an aside: I personally prefer less lime juice, a bit more chili powder, and kosher salt, but this is the core recipe on which to build.
This recipe is incredibly good with grilled steak, or the leftovers can be mashed to be used for sweet potato biscuits to accompany a garlicky Texas chili.)

Here's my broccoli; really straightforward: sautee with butter and garlic and salt and pepper, squeeze a lemon on it before plating.

This cauliflower is really popular. I got it from Food and Wine:

3 lbs cauliflower
4 tbsps unsalted butter, melted
1 tsp sugar
1/2 tsp salt
1/2 tsp ground pepper
1/2 tsp sweet paprika
1/2 tsp hot paprika
1/4 tsp cinnamon
coarse salt for sprinkling

Preheat oven to 500*. In a large bowl, toss the cauliflower with the butter. In a small bowl, combine the sugar, salt, pepper, sweet and hot paprika and the cinnamon. Toss the spices witht he cauliflower until evenly coated. Spread the cauliflower on a baking sheet in a single layer. Roast for 20 minutes, stirring once or twice, until the florets are crisp-tender and carmelized. Plate and sprinkle with the coarse salt. Serve hot or warm.

Thanksgiving is way easy on non-meat eaters. There is so much food that isn't turkey that there's no reason to worry about them. It's nice if you make dressing (cooked outside the bird) as well as stuffing (cooked inside the bird), but other than that, there's no need for any special accomodation.

Steve's post a month or so villifying militant vegetarians struck me as unfair. Most non-meat eaters aren't militant about it and don't expect accomodation as dinner guests.

Also, if you're a vegetarian, it's best to not think too deeply about what your eating. That tofu's made of stuff harvested by combines going through huge fields filled with voles and rabbits. Just for one example.

I make great vegan thanksgiving dinners!

Instead of turkey, I make turnovers: roasted squash and peppers, with carmelized leek, seasoned, and wrapped in phyllo and baked crispy brown. I posted a recipe at my blog last November.

Everything else is is pretty much as you would expect - yams, mashed potatoes, roasted brussels sprouts, and I make a nice shiitake mushroom gravy.

Works for us.

for 2 meal sized or 4 side salads

~1/2 lb salad greens, generally works best with the "mixed salad greens" you can pick up at better grocery stores/delis
3 or 4 carrots
1 large or 2 small portabello mushroom(s)
~1/4 cup chilli paste with soya bean oil (Pantainorasingh brand available at most asian markets)
handful of pine nuts
crumbled blue cheese
fresh ground pepper
sesame oil
basalmic vinegar

wash and drain greens and split evenly into bowls and sprinkle blue cheese over top

dice carrots and set aside (I normally cut at an angle, semi-julienne)

remove stem(s) from mushroom(s) and slice in half across the diameter. then slice into 1/4" strips and set aside

heat sesame oil on high heat and add black pepper.
add carrots and stir fry. when carrots start to soften, add chilli paste and continue to stir fry until it starts to carmelize. pour carrots and chilli paste mix onto the top of the salad mix and return wok/pan to heat.
add ~1 teaspoon sesame oil to wok/pan and stir fry mushrooms until tender, then pour onto salad.
return pan to heat and add pine nuts to dry pan, stirring constantly until they brown. add to salad on top of mushrooms, return pan to heat briefly, then deglace with basalmic vinegar and pour on top of salad

serve immediately

What I meant then, and now, is that if you have a particular political viewpoint, making your guest accomdate them is the height of obnoxiousness. Whining about meat gravy and cruelty to turkeys is simply being a bad guest.

If that offends you so much, eat with people who share your beliefs.

I have been in homes where food was forced on me, literally. And I ate it with good grace. When I don't eat something, I say so early on.

I don't think most people act that way, but there are those who do, and it's just bad behavior when that happens.

Oh, I believe it was Tlazolteotl with the mushroom gravy. I'd like it, too.

I use mushroom or vegetable stock for dressing when my mom or sister are coming to dinner, usually vegetable stock since I always find something else to do with mushrooms (they are actually my favorite part of beef w/burgundy, and all of that is melt-in-your-mouth good).

Those turnovers sounded good, too.

My husband and I are carnivores, but it seems healthy to limit that to a few days per week.

I couldn't serve tofurkey or anything that is shaped like an animal to a vegetarian since most of the ones I know don't eat animals for ethical reasons. An animal shaped thing is really sort of an insult to them.

Since our table has just about one of everyone at it, I always include lots of vegetarian/vegan friendly foods and I also make sure that the vegans get a complete protein too.

Since this is harvest time and a time to think about how the first settlers survived with the help of the natives, I have a recipe that commemerates the harvest the natives would eat at this time of year. Corn, beans and squash were grown together for two reasons: nutrionally this was a complete protein and the three plants complemented each other. The beans would put nitrogen in the soil, the corn gave the beans something to grow on and the squash would provide ground cover protecting the earth from pests and providing shade so that the garden would retain moisture.

With that in mind, allow me to introduce my

Three Sisters Casserole

1 medium to large squash (I like butternut because it's easy to peel)
1 1/2 cups cooked beans (black or pintos work best) with cooking water
Masa harina or cornmeal
2 tsps baking powder

Peel and slice the squash thinly and place in the bottom of an oiled dutch oven or casserole. Pour beans and reserved cooking liquid over the squash (if using canned beans, don't use the canned water, use broth or water instead -- about 1 cup). Pour a cup of salsa over the beans.

The topping can go in many directions -- if in a hurry crumbled totilla chips or strips of stale tortillas work fine, but I make a thick dough of masa, baking powder and salt (sometimes I add roasted chilis to the dough) and then mix in enough water to make a thick, dry paste. Put the cornmeal dough over the salsa and beans and bake, covered, in a 350 degree oven for about 30 minutes. Uncover and cook for another 15 or 20 minutes more to brown the cornmeal topping.

Serve hot or at room temperature.

Hey, Dr. Wolf, I have a good vegetarian recipe for your son. I've been making this for years and even non-veges really enjoy it. This recipe feeds 4 as a stand alone meal.

Spinach Pie

2 pie crusts (bought is fine)
9-10 eggs
1 lb tofu (I prefer firm, but any works)
6-8 oz feta cheese
herbs (basil, dill, parsley, oregano, whatever you like w/eggs)
pepper to taste
1 bag spinach, washed.

-Beat eggs
-add herbs and pepper
-cut tofu into cubes
-add tofu and beat again until relatively smooth
-Crumble feta into mix
-beat again
-Microwave spinach in glass container for about 2 minutes. This helps deflate it. If using baby spinach, 60 seconds will do (but mature spinach has more flavor)
-Add spinach slowly to egg mixture*
-Stir with fork or wooden spoon
-Pour mixture into crusts

Bake at 350 for 40-50 minutes (depending on your stove)

It's basically a jumped-up quiche, but the tofu gives a protein burst. The feta adds salt and flavor and hides the tofu. Folks don't usually know it's in there unless I tell them.

*My kids like it when I layer the spinach and egg mixture because it looks cool and the eggs do fluff up a bit more, though not significantly.

Tofurkey? Blah! I'd go for mushroom lasagna instead. The recipe in the September/October 2006 issue of Cook's Illustrated is so delicious that I'm thinking of making it for my vegitarian co-workers for the office Thanksgiving get-together.

How about a nice wild rice and mushroom hot dish? (aka "casserole" for those of you who live outside of the Upper Midwest.) If you can, get the actual true wild rice, as it cooks up in about the same time as brown rice (45 min. or so), whereas most store-bought wild rice (those little dark brown bullets) has to be soaked overnight first.

I made an all-veg Thanksgiving one year - I made eggplant stuffed w/ cornbread & veggie sausage (breakfast patty style), acorn squash w/ maple syrup, garlic mashed potatoes, and mushroom gravy made with a base of dried porcini.

I didn't have a recipe for the gravy, but it was more or less this:

"Mushroom gravy can be made by purchasing mushroom broth or using the liquid from soaking dried mushrooms. Sauté sliced mushrooms and onions and add to heated broth. Thicken with cornstarch and allow to cook until the flavors are melded. In addition, you can purée soaked dried mushrooms with sautéed onions and tofu for a creamy mushroom gravy."

I used the soaking liquid for broth, and sauteed some shallots w/ a bunch of cremini mushrooms and the reconstituted porcinis. I thickened it with cornstarch. (I haven't had a whole lot of luck w/ pureed tofu as a 'cream' substitute...)

I posted this last year on kos and got raves. Here it is, our tradional veggie Thanksgiving nut loaf...
Jody's Nut Loaf
(Our dear friend Jody came up with this many years ago and we've been having it almost every Thanksgiving since. Enjoy! But remember, just because it's vegetarian doesn't mean it won't make you fat!)

2 Tbs oil
1 diced onion
1 ½ cups chopped mushrooms
2 cloves minced garlic
1 diced green pepper
1 tsp ea of thyme, marjoram, & savory (she doesn't use savory)
1 tsp sage
Salt & pepper
1 ½ cups cooked brown rice
1 ½ cups finely chopped walnuts
½ cup cashews finely chopped
4 eggs
1 cup cottage cheese
¾ pound grated cheese (cheddar, smoked, fortina or whatever--she always adds smoked gouda--and add some parmesan for sure)
¼ cup mixed fresh herbs such as parsley, oregano, thyme sage, etc.

Cook onion in oil until it begins to soften.
Add mushrooms, garlic, green pepper, dried herbs.
Cook until mushrooms & peppers are soft.
Place cooked concoction in a large bowl, add all the remaining ingredients & mix well.
Check seasoning. Leave it a bit undersalted at this point.

Line the bottom and sides of a 9-inch bread pan with two crossed rectangles of baking parchment or foil, leaving 3 inches over hanging on each side. Liberally butter the lined pan, including the ends.

Put the cheese & nut mixture in the pan.
Rap pan sharply on a counter once or twice to get rid of air bubbles, then smooth out the top with a spatula.
Fold over the overhanging paper on the top.

Bake in preheated 390 oven for about an hour until firm to the touch (we usually cook it longer than that, until browned.)

Remove pan to a cooling rack. Let sit for 10 minutes.
Pull the paper back from the top of the loaf and turn it out onto a serving platter.

Serve with nut loaf sauce (gravy for vegheads).

Nut Loaf Sauce
2 ½ cups of vegetable stock (or water)
2 Tbs nutritional yeast
¼ cup flour (unbleached)
5 Tbs. Light sesame oil or olive oil
1 Tbs butter
2 Tbs tamari (soy sauce)
2 tsp mustard (stoneground or Dijon)
pepper to taste
3 large cloves of garlic pressed through press
¼ cup sherry

Put stock on to heat so that it is boiling when needed.
Toast the yeast & flour in a sauce pan, stirring over medium-low heat until fragrant & lightly browned.
Add oil & butter & cook for 5 minutes.
Slowly whisk in 2 cups of boiling broth, then lower the heat & simmer gently for 10 minutes.
Add soy sauce, mustard, pepper, garlic & sherry. Cook for another 5 minutes.

Ok, everybody. I am not a vegetarian, per se, but my girlfriend is and so I make a veggie thanksgiving dinner as well as a meat one. While some of the recipes here sound good, what most of them lack is the centerpiece feature that makes everybody focus on the turkey. How to compete? A STUFFED Pumpkin! It stands up proud to any turkey, isn't made of abominable meat substitute and vegetarians don't have to settle for dressing..they can have as much stuffing as they want. One recipe from the master! (for Vegans, use olive oil, vegetable stock, lots of garlic, and almonds) Brush with oil or butter for a stunning look!
Saute medium sized chopped onion in butter. Add a couple handfuls bread stuffing and saute a little (2 or 3 slices). Add 1 teaspoon each of thyme, sage and salt and a little pepper. Put mixture in small pumpkin which has been cleaned and buttered on inside. Sprinkle 4 ounces coarsely grated Swiss cheese. Then add either 2 cups veggie stock or 2 cups cream and bake at 400 degrees until it bubbles, then reduce heat to 325 degrees for 2 hours.

Makes about 3 lbs.

The combination of tofu and soy or chickpea flour with the gluten makes a seitan that is tender, not rubbery, and which slices easily, even in VERY thin slices. The long kneading, resting, and slow-cooking method partially adapted from recipe by Ellen from gives an incredible juicy, tender meat-like texture. This recipe makes outstanding sandwich material.

2 c. pure gluten powder (instant gluten flour; vital wheat gluten)
1/2 c. full-fat soy flour or chickpea flour
1/2 c. nutritional yeast flakes
2 tsp. onion powder
1 tsp. garlic granules
1/4 tsp. white pepper

12 oz. firm regular (NOT silken) tofu
1 and 1/2 c. water
3 T. soy sauce
1 T. olive oil

2 c. hot water
1/3 c. "chicken-style" vegetarian broth powder
2 T. olive oil
OPTIONAL: 4 cloves garlic, crushed
1/2-1 tsp. poultry herbs (sage, thyme, rosemary), crushed well

1) For the Wet Mix, in a blender, blend all the ingredients until very smooth.

2) Mix the Dry Mix ingredients in the bowl of your electric mixer with dough hook attachment, or place them in the bread machine in the order given. Add the Wet Mix and knead for about 10 minutes. (If your bread machine has a dough cycle-two kneads with a long rest in between-use that cycle. Otherwise, just run it through the kneading part and then unplug it and let it rest in the cover container, then plug it in again for another knead, then remove it,) Let rest for about 1 hour, covered. You can make your Cooking Broth at this time and have it ready. Then knead it for 10 more minutes.

3) (NOTE: You can knead by hand, too, but it's tougher than bread dough. You may want to let the seitan dough sit for a while to soak up the liquid more thoroughly before you starting hand-kneading.)

4) The dough should be quite shiny and smooth. Avoid breaking it up when you take it out of the bowl. NOTE: I like to line the pan with cooking parchment to avoid sticking and tearing, and make the loaves easier to turn, by whichever method.

5) COOKING METHOD #1.) Flatten the dough out into a long piece. Form the dough into one large loaf. Place into a oval greased clay cooker or claypot that has been soaked for 15 minutes in cold water (bottom and cover), and lined with cooking parchment. DO NOT PREHEAT OVEN. Pour the cooking broth over the roast, and cover. Place in oven and turn to 325 degrees. F. Bake for 3 and 1/2 hours, turning the roast over twice (ALTERNATE TO THIS METHOD: If you don't have a clay cooker, you can use an ordinary oval meat or turkey roaster, medium size, with a cover. PREHEAT THE OVEN FIRST WITH THIS PAN.)

6) COOKING METHOD #2.) Preheat the oven to 325 degrees F. Flatten the dough out into a long piece and cut in half equally to make two rectangles. Form into 2 loaves. Place each loaf in an oiled 8 and1/2" x 4 and 1/2" loaf pan and press down a bit with your hand. Mix the Cooking Broth ingredients in a small bowl and pour 1/2 over each loaf. Cover each loaf pan with foil and place in the oven. Immediately reduce the oven heat to 200 degrees F. Bake for 3 hours. Turn the loaves over, carefully loosening around the edges and from the bottom with a small, thin spatula first. The loaves will have puffed up quite a bit by now, but they will flatten out as they cook further. Turn heat back to 325 degrees F. Cover loaves and bake for 30 minutes. Turn them over again, cover and bake 15 minutes. Turn them over again and bake 15 more minutes, covered. Turn them over one last time and bake 5-10 minutes.

7 ) Either way, the loaves should almost completely soak up the broth by the end of the cooking time. If they don't, cook until they do. There will be a bit of sticky "sauce" left in the bottom, which you can use to glaze the loaves. Remove from the pans and serve, or let cool. Seitan is generally better when cooled first, then reheated-it firms up. So, it's a good idea to make it a day or more before serving. Can be frozen.

8) IF YOU WANT A "SKIN" ON THE "TURKEY", bake the "turkey as directed above. Then it has to be bake again with the "skin", but the pre-baking can be done several days ahead of time.

You will need 2-4 large sheets of dried or fresh (probably frozen) Chinese beancurd skin (yuba in Japanese). This product is simply the "skin" that forms on the top of soymilk when it is heated (just as it does with ordinary milk). The "skin" is lifted off and dried, and is considered a delicacy in Chinese and Japanese cuisine. In its dried form, it keeps for a long time, as long as it is stored airtight. When reconstituted, wrapped around tofu or other fillings, and baked, it becomes delicately crispy.

Soak the dried beancurd skin in warm water to cover while you make the assemble the "turkey". If you are using fresh or frozen, fresh yuba, thaw it out, if necessary. If it is pliable, you can use it "as is". If it seems a bit dry and hard to fold, etc., then dip it in warm wate for a minute—just to soften. If you leave it in the water too long, it will start falling apart.

Oil a baking pan that the "turkey" fits into with a little room to spare, or a cookie sheet with sides (jelly roll pan) with the Chinese sesame oil. Line another pan, such as a cookie sheet, with the prepared beancurd skin, overlapping if necessary to make it big enough to cover the whole "turkey". (There will be overhang—this is good.) Place the roasted "turkey" on top. Fold the overhanging beancurd skin over the "turkey" to cover. Brush with olive and/or Chinese roasted sesame oil. Now invert th ewrapped "turkey" onto the prepared baking pan. If made ahead, cover the pan and refrigerate until baking time.

Preheat the oven to 350 degrees F. Bake the "Turkey", uncovered, for about 1 hour, or til golden and crispy, basting now and then with oil (olive/sesame oil combination). Loosen the edges carefully and slide it onto a serving plate.
